Scale Back Alabama volunteer’s favorite recipe:

Teresa Fair is a registered dietitian at the Alabama Department of Public Health. Teresa openly admits she does not enjoying cooking. "Just because I am a dietitian does not mean I like to be in the kitchen. As a working mother, I need foods that are easy to prepare and healthy too.” One of Teresa’s favorite snack items is a smoothie. It sounds different but is really good!

Green Smoothie Recipe

Ingredients:
1/2 cup water
1 handful of kale
1/2 cup strawberries (fresh or frozen)
1/2 cup pineapple (fresh or frozen)
1/2 cup mango (fresh or frozen)

Preparation Steps:

Blend water and kale first; add other ingredients individually and blend. May add 1/2 tsp of agave nectar if extra sweetness is desired.

Fat: 0.8 gram
CHO: 37.1 grams
Protein: 2.3 grams
